Southwest Wrap

This was a pretty good lunch & it was quick too!

Ingredients:
Chicken
Black Beans
Corn
Lettuce
Laughing Cow Cheese Wedge
Fat Free Tortilla Shell

Directions:
Heat the chicken, beans and corn in a non-stick skillet sprayed with cooking spray. Spread the cheese over the tortilla shell and top with lettuce & warm mixture.

I really liked this recipe, but next time I will probaly spice it up with some red or green peppers. Also, I LOVE Laughing Cow Cheese, but it's so mild that I couldn't really taste it in this recipe. I will probably relace it with some low fat dressing next time...

  3. and jalapenos (0 pts) too! I always put them on my salads at work - especially the Southwest Salad they serve. Now a salad tastes bland without them!

  4. I'm guessing on the points here, but it think it would be about 7 or 8 points (I don't think I used a whole point worth of beans or corn)...
    4oz chicken: 3pts
    1/2 cup beans: 1pt
    1/2 cup corn: 1pt
    lettuce: free
    Tortilla Shell: 2pts
    Cheese wedge: 1pt
