Crunchy Broccoli Salad

Here's a new salad they served at work recently and I thought it was pretty good and probably fairly WW friendly. I ran the numbers and a 3/4 cup serving is 3 WW PointsPlus:

Crunchy Broccoli Salad

8 cups fresh broccoli florets
1 bunch thinly sliced green onions
1 cup grapes
3 tablespoons canola oil
3 tablespoons seasoned rice vinegar
2 tablespoons sugar
¼ cup sunflower kernels
¼ cup real bacon crumbled

In a large bowl, combine the broccoli, onions and grapes. In a small bowl, whisk the oil, vinegar and sugar. Drizzle broccoli and toss to coat. Sprinkle with sunflower kernels and bacon. Chill until serving. This yields 10 servings.

2 milligrams cholesterol
233 milligrams sodium
14 carbohydrates
3 grams fiber
3 grams protein

Mixed Berry Crumble

Eating Healthy, for some reason makes me hungry/crave sweets at times. After eating a decent dinner, I'm ready for something like Cake or Pie or Anything bad for me! :) But if I eat a huge "oh my I'm so stuffed I don't think I could eat anything else!" SO.... for those times when I'm in a crave its always nice to have a sweet dessert that isn't LOADED with garbage :)


I have not tried this, but think it looks amazing!


Mixed Berry Crumble
Servings: 8

Prep time: 7 min

Cook time: 40 min



2 C. fresh blueberries
2 C. raspberries

3/4 C. flour
2/3 C. brown sugar

6 Tbsp melted butter


Preheat Oven to 350. Combine Flour & Sugar, Place berries in seperate bowl. Remove 3 Tbsp of flour mixture and gently toss with berries. Place berries in a 8-inch square pan.


To make topping add melted butter to remaining flour mixture; combine well. Crumble little bits of topping all over top of berries. Bake until berries just start to bubble, about 35-40 min. Serve warm or at room temp.

WoW- its been awhile!

I'm starting my own 4-week challenge... :-) Part of my challenge... is to post 1 healthy reciepe every week! all other sorts of fun things are included in this challenge-the goal?!-To get back on track and a healthy outlook on SuMmEr!!!!

Very good Salsa

2 cans of black beans, drained
2 cans of corn, drained
1 can of peite diced tomatoes, drained
1 red onion diced
1 red pepper diced
1/2 bottle light zesty italian dressing

Mix all together and serve with corn chips.
